Whipped potatoes are a delicious treat anytime! If you’re planning to add them to your vegan Thanksgiving table, consider dressing them up a bit with chopped chives and fresh parsley.
5 medium potatoes (about 1 ¾ lbs. )
¾ tablespoon salt
½cup non-dairy unsweetened milk
3 tablespoons Earth Balance Spread (Original)
¼ teaspoon white pepper
1. Fill a small pot with water and â…“ of the salt.
2. Pare potatoes and cut in chunks. Put the potatoes in the pot and bring to a boil. Cook until potatoes are soft, about 20 minutes. Drain potatoes and set aside.
3. In a small saucepan or in the microwave, heat non-dairy milk, Earth Balance Spread, and ½ of the remaining salt until Earth Balance melts. Do not boil.
4. Whip potatoes with a hand mixer or immersible blender until smooth. Combine non-dairy milk mixture with the potatoes. Add pepper and remaining salt, to taste.
Optional: top with chopped chives and fresh parsley.
