S’mores Pudding (Gluten-Free!)

Note: if you can’t find vegan marshmallows in your area, you can buy Dandies vegan marshmallows online through Amazon


2 medium frozen bananas
3 tablespoons cocoa powder
4 tablespoons unsweetened coconut milk (So Delicious brand in a carton, not a can)
1/2 cup mini vegan marshmallows
3 small gluten-free graham crackers
sliced almonds for topping


1. Add the frozen bananas to your blender, food processor, or Vita-Mix. Pulse and slowly adding milk. You don't want it to get too processed. 

2. Add cocoa powder, 3 small graham crackers and 1/2 cup of vegan marshmallows. Continue to pulse until the mixture has the desired consistency. (You can make it either chunky or super smooth). Depending on your equipment, you may need to scrape the sides as you pulse. 

3. Transfer chocolate s'more mixture into serving dish and top with sliced almonds and a mini-marshmallows. Chill for 1 hour before serving.
