1 pound shredded raw beets
1/4 shredded raw yellow onion or shallot
2 teaspoons good mustard
2 Tablespoons olive oil
1 Tablespoon sherry vinegar
Salt
Pepper
Mix all ingredients together. Add salt and pepper to taste. Enjoy!
