This easy vegan dessert can be served with or without vegan ice cream. It’s great for Thanksgiving or as a special treat. Try topping it with our raw vegan ice cream or one of your favorite brands. If you have leftovers, the compote is delicious hot or cold.
Recipe may be doubled or tripled.
2 large Fuji apples
1 cup apple juice
¾ cup breadcrumbs
1 ½ tablespoons ground cinnamon
½ cup Sugar in the Raw
1½tablespoons Earth Balance Spread (Original)
1. Spray small baking dish with Pam. Preheat oven to 425 degrees.
2. Peel and core apples. Cut apples into thin slices. Put a layer of apples in the bottom of the baking dish. Sprinkle a small amount of the cinnamon, sugar, and breadcrumbs over the layer. Continue this process until all the apple slices are in the baking dish. Pour the apple juice and any remaining ingredients over the apples. Top with the Earth Balance Spread.
3. Bake for 45 minutes or until apples are browned and soft.
