Raw or Roasted Red Pepper Dip

A big thank you to the Pura Vida Pantry located in Costa Rica for sharing their super yummy recipe with us! This dip recipe is great for a snack or a party… and there is also a raw option if you’d prefer…. Yum!

You can make yummy pita crisps by brushing pure Coconut Oil on Pita Bread, cutting it into 4 triangles and lightly searing them in a frying pan.  For a completely raw choice, pair with carrot & celery sticks, cucumber slices & raw crackers. 

Ingredients

2 Cups Sliced & Roasted Red Peppers (for a Raw Dip, use raw peppers, not roasted)
1 Cup Walnuts
1 Clove Garlic
3 Tablespoons Olive Oil
2 Tablespoons Freshly-Squeezed Lemon Juice
1/2 teaspoon Crushed Chili Flakes
1/2 teaspoon Cumin
1/2 teaspoon Sea Salt
2 Tablespoons of Parsley for Garnish

Preparation

1. Place red peppers, walnuts, and garlic in a Vitamix, regular blender or food processor

2. Blend until smooth, then add in remaining ingredients except for the parsley. Blend it all together until it is creamy & delish. You may choose to add more sea salt, or even more chili flakes, if you want a spicier dip. 

3. Sprinkle with parsley & it is ready to devour!
