This super rich and creamy dairy-free topping has become one of my favorites! It’s made from cashews and macadamia nuts. It’s delicious as a dip for fresh strawberries and also makes a fabulous topping for fruit salads or pies. YUM! Enjoy.
1/2 cup macadamia nuts
3/4 cup cashews
2 Tablespoons agave
1 1/2 teaspoons vanilla extract
1/2 cup of water(*May need more for your food processor)
2. Transfer to a glass container and store in the fridge until ready to serve. The mixture will be a thick liquid at first and will become firmer in the refrigerator once it has time to set.
Refrigerate at least one hour prior to serving.
Note: If you are using a Vita-Mix professional series, choose the "frozen dessert" setting and use the tamper to keep mixing throughout. That will give the topping more of a whipped texture.
